Recipe - Pasta In Creamy Tomato Salsa Sauce - Blogathon Post 5

My sis C is a complete foodie and loves trying out new dishes and cuisines (both eating and cooking :) ). Pasta is one of her all time favourite dishes and this particular recipe is always a hit in the D household.....Enjoy!!!






Pasta In Creamy Tomato Salsa Sauce

Ingredients:

2 cups Penne pasta (can use elbow pasta also)
¼ cup corn (boiled)
1 spring onion chopped fine (keep the greens separate)
¼ cup capsicum diced
¼ cup carrot diced
½ tsp dry basil leaves
½ tsp black pepper powder
½ tsp cumin powder
½ tsp red chilli powder
1/2 cup milk
2 tbsp oil + 1 tsp oil
Salt to taste


For the Sauce

2 Tomatoes chopped and pureed
½ tbsp. ginger chopped
½ tbsp. garlic chopped
1 Green Chilli chopped fine


Method:
Grind the ingredients listed under 'Sauce'to a puree and keep it aside.


Chop the vegetables and keep aside.



Boil the corn and keep aside.


Boil 10 cups water, when it is boiling, add the pasta and salt. Cook for 10 min on high flame. The pasta should be almost done. Drain the water. Add 1 tsp. oil to the pasta and toss. The pasta should be well coated with the oil.


In a kadai or thick bottomed pan, heat 2 tbsp. oil.


Add the onions (white portion) and fry till translucent.


Add the carrots and capsicum. Stir and cook till vegetables are a little soft.



Add the dry basi leaves, chilli, cumin and pepper powders. Mix and fry for a minute.



Add the tomato puree and mix well.


Cook till the oil starts to separate.


Add the corn and mix well.


Turn to a slow flame and add ½ cup milk. Continue to cook on a slow flame only till everything is well blended. Adjust the salt according to taste.


Add the pasta and spring onion greens. Mix well and cook for 2 min.


Your delicious Creamy Pasta is ready. Serve hot and enjoy :)



Note:
1) For this recipe, we used Durum Wheat Pasta.
2) You may use normal pink onions instead of spring onions.
